His major impact on cuisine came through the invention of the toque (chef's hat), extraordinary sauces and dishes and through importing service a la Russe (how we eat nowl) to Europe from the Russian court Carême drew a direct line between food and architecture. His great works of pastry and confectionary were directly inspired by buildings. While working in Russia he spent his spare time working on the book Projects for the Architectural Embellishment of St Petersburg. For the publication he toured the public spaces of the city and made notes of areas that to his confectioner's eye could do with some 'embellishment'.
A site specific jelly installation inspired by Antonin Careme. Carême was known as the "king of chefs and chef to kings" and variously cooked for Napoleon, George IV and Tsar Alexander. He drew inspiration from buildings, claiming that architectures main branch was confectionary. Carême made his name with two meter high pièce montées (mounted pieces), elaborate table decorations that represented rotundas, temples, columns and arches in varied Classical, Gothic and Chinoiserie styles.
He was so successful he could afford to turn down a permanent job offer from
Tsar Alexander.

Funeral Jelly Installation September 2009
As part of the Sensate: Bodies and Design exhibition at the San Francisco Museum of Modern Art Bompas & Parr created a glow in the dark funeral jelly installation. Guests were served glowing sherry jellies designed with motifs found at the San Francisco Columbarium. A jelly funeral march accompanied the jellies.

Architectural Jelly Design Competition July 2008
Bompas & Parr invited architects to design a jelly as part of the London Festival of Architecture 2008. The jellies were later displayed at the Architectural Jelly Banquet and the moulds auctioned off to raise money money for building charity Article 25.
About our Jelly Service
Bompas & Parr provides jellies for parties, weddings and corporate events. Jellies and displays can either be integrated into a meal or stand alone as an impressive feature. Jellies can be made in an infinite variety of flavours, colours and shapes. Due to their delicate nature we provide a jelly technician to deliver, set up, unmould and plate the jellies.
Generally we provide a non-edible jelly display table or stand which will combat
the heat of a venue and then serve fresh fruit or alcoholic jellies alongside.
Every event affords a choice of moulds from our unique and growing collection.
Bespoke moulds are also available and are made in our in-house workshop.

Wedding Jelly
Brides keen to avoid stodgy wedding cake can order a huge wobbly tower of jelly instead. Jellies are kinder to the stomach after a heavy meal so make it less likely for guests to fall asleep during the speeches!
A striking 1m high tower containing over 100 wobbly jellies can be matched in colour and pattern to the scheme of the event. Guests are served a range of fresh fruit and alcoholic jellies the moment that the 'cake' is cut.
All jellies are made with the finest ingredients and can be made in a huge variety of colours, flavours and forms. Popular flavours include: elderflower and summer fruit; plum and red wine; Prosecco, violet and gold; absinthe and lime; and marbled cardamom blancmange.
Popular moulds include St Paul's Cathedral, Brighton Pavilion and Buckingham Palace.

Bespoke jelly moulds are available as part of a wider jelly commission or as individual items. Lead times vary depending on complexity of design and finished material but plastic moulds for events are usually achievable with a couple of weeks notice.
